Spd 135:
Once I am set I adjust the sensitivity (if necessary)  and the range.  Sometimes I go into enhance and make adjustments.  Mostly it is not being in a hurry and finding your best image per usage.  Scanning sonar does not usually provide an image like sidescan does unless you move to the Konsberg Mesotech.  The biggest thing is to put divers in the water and practice on them.  I was fortunate enough to get this image from my divers in Ky when they swam across the beam.

the first photo of yours I can read and its clear, the second image i found on the net. None of our images even come close to this clarity. Am I just missing something?
