I have never had this issue before and don't understand why it is doing this. It only does this while recording.

Sounds like a voltage issue. Weak battery most likely. The engine pulls a lot of amps during cranking and the voltage to the unit is probably dropping and causing it to shut down. When you are recording, the unit needs more power than when its just in normal operation.
Check the battery or isolate the unit from the cranking battery and see what happens.

Ive seen engines do what RG said where all the voltage was used to crank the engine and not enough left to fire the ignition.
I think he is right! Put a meter on the power wire to unit and crank engine I bet voltage drops to less than 9 at meter
